Sausage Biscuit Bites & Brown Sugar + Honey Banana Muffins

My husband's office rotates who brings breakfast in every Friday. 
I always enjoy trying new recipes when it's his turn in the rotation (which is this week).

I've been eyeing Plain Chicken's Sausage Biscuit Bites on Pinterest for quite some time now, and this was the perfect opportunity to try them out (you know, so that I didn't eat all 40 bites by myself)!

2 (10 count) cans flaky biscuits (Grands Jr)
1 lb sausage (Tennessee Pride)
2 cups shredded cheddar cheese

-Preheat oven to 400.
-Mix uncooked sausage and cheese gently until well blended. Shape into 40 balls of equal size.
-Remove biscuits from cans and separate each biscuit into two layers, making 40 total biscuit layers. 
-Press one layer of biscuit into cup of lightly greased mini-cupcake pan. Repeat with remaining layers.
-Place sausage-cheese ball in each biscuit cup (make sure you press the sausage ball down into the biscuit cup vs. simply setting it on top). Bake for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly.

I also had some ripe bananas, so I decided to make these yummy banana muffins! 

2 large ripe bananas, peeled
1/2 c (1 stick) butter
1 c brown sugar
1 egg, beaten
1/2 c milk
2 tsp pure vanilla extract
1/2 tsp salt
2 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda

      Preheat the oven to 375. Line 12 cup muffin tin with liners. 
      Put the bananas in a large, microwave safe bowl. Microwave on high for 1 minute. Add the butter and microwave 20 seconds at a time until the butter is softened but not melted. (It is fine if a little bit of it melts).
      Using a potato masher to mash the bananas and butter together until there isn't a lot of lumpiness left.
      Thoroughly stir in the sugar, beaten egg, milk, vanilla extract, and salt.
      Place a sieve over the bowl and fill it with the flour, baking power and baking soda. Sift the contents into the wet ingredients, trying to stir the sieve as you go to distribute the leaveners. *I did not do this step! I went straight to the next one:)
      Fold the dry ingredients into the wet. Stop when they are just moistened to avoid tough muffins.
      Distribute the batter into the tins. *I topped batter-filled tins with drizzled honey and brown sugar! Bake until dark brown, and a toothpick inserted in the middle comes out dry, rotating once about halfway through baking. Total baking time in my oven was about 15 minutes.

    And here's what you get...
    Yummy! The honey and brown sugar makes for a delicious sweet & crunchy top!
