Cowboy Quesadillas

A few weeks ago, I found some stellar deals on Velveeta Cheese and Rotel. I needed something fun to make with these ingredients besides the obvious Queso Dip! Thankfully, Heather at House of Woyaks sent me a recipe for Cowboy Quesadillas made with Velveeta Cheese and Rotel!!

What You Need:
1/2 lb (8oz) Velveeta Cheese, cut into 1/2-inch cubes
1 can (10oz) Rotel Diced Tomatoes & Green Chilies, drained
4 cups shredded cooked chicken
4 green onions, thinly sliced
6 flour tortillas (10 inch)
**I really loaded our quesadillas, so we were only to get 4 out of this recipe**

I used chicken tenderloins, but you can use any type of chicken/meat/veggies, etc

Toss your Rotel and diced Velveeta into a microwave safe bowl for 3 minutes (stirring after 2 minutes).
I received this Pampered Chef microwave safe bowl as a gift, and it's wonderful!

While your cheese and Rotel are in the microwave, go ahead and slice 4 green onions

When the cheese and Rotel are done heating,
 stir in your shredded chicken (or meat/veggies) and green onion

Scoop 2/3 cup of your chicken & cheese mixture onto half of a 10-inch tortilla. 
Fold tortilla in half. Add to a PAMed skillet (med-high heat). 

Cook 1 minute on each side, or until golden brown. Repeat with remaining tortillas and filling. 


Cut into wedges and serve.

COWBOY QUESADILLAS
What You Need:

1/2 lb (8oz) Velveeta Cheese, cut into 1/2-inch cubes
1 can (10oz) Rotel Diced Tomatoes & Green Chilies, drained
4 cups shredded cooked chicken
4 green onions, thinly sliced
6 flour tortillas (10 inch)

Make It:
>Combine VELVEETA and ROTEL in 1.5 qt, microwaveable bowl. Microwave on HIGH 3 min. or until VELVEETA is completely melted and mixture is well blended, stirring after 2 min. Stir in chicken and onions.
>Spray large nonstick skillet with PAM cooking spray and heat on medium-high heat. Spoon about 2/3 cup chicken mixture onto half of 1 tortilla; fold in half. Add to skillet; cook 1 min. on each side or until golden brown on both sides. Removed from skillet. Repeat with remaining tortillas and filling.
>Cut into wedges.
