Authentic Fried Rice

2 Carrots
1 Onion
1 bag Frozen peas
Ginger root
2-3 Eggs
Soy sauce
Meat (shrimp, chicken, etc)-optional

Cook rice in rice cooker (2.5 c rice to 3 c water)
Let rice cool.
Cook meat (if applicable)
Peel and finely chop ginger (very small amount)
Dice carrots and onion.
In large saucepan (used to cook meat), combine: meat, carrots, onions, ginger, & frozen peas.
Cook eggs in corner of pan (swirl; don't scramble)
Stir to combine meat, veggies & eggs.
Stir rice into pan.
Add soy sauce to taste.

*Portions of ingredients will vary depending on amount of rice.
